One more! You’d be forgiven for thinking that Lyon doesn’t need this… Our streets are overflowing with places to dine and celebrate Lyon’s gastronomy as it should be. But this one seems to be pushing the boundaries, and doing so to our delight. Scheduled to open in September 2025, WineYouWant has yet to open its doors, but it’s already promising much.
“Cuisine de terroirs et expériences bachiques”: a concept for epicureans
WineYouWant ‘s ambition is to become a truly unique living space, combining a restaurant with a creative and committed menu with wine experiences. The restaurant will be managed by chef Hubert Vergoin, the former owner of Le Substrat, renowned for his demanding and audacious cuisine. A total of 110 covers will be served 7 days a week, midday and evening, in the main dining room, the veranda and the 2 seasonal terraces.
The cellar figures are impressive. More than 500 exceptional references, combining great classics and new discoveries, to celebrate the love of wine at the highest level. To this end, 48 wines by the glass are available for a multitude of food and wine combinations.
A 1000m2 showcase in a century-old iconic Lyon location
The location had to be right for such high expectations. Founders Vincent Galy, Pierre Bideau and Grégory Palayer finally chose the walls of the former Collège Serin at the foot of the Croix-Rousse and the Quais de Saône. A total of 1,000 m2 will be laid out in a variety of spaces, including 2 terraces and 3 private lounges.
Behind this idea, three passionate people, but above all friends, driven for a long time by the same desire: to redefine the very concept of a place to live around gastronomy and wine. An opening that promises to be an unmissable event in the autumn of 2025. In any case, we’re already looking forward to seeing you there!
