Time and again cited as the star of Lyonnais gastronomy, the praline was due to have its moment of glory when it would be (even more) the center of attention. And now, to the delight of the people of Lyon, the Mondial de la praline is back for its 3rd edition!
A long-standing specialty
Praline has acquired its letters of nobility over the years. It’s known the world over in a variety of forms, but in Lyon it’s the little pink praline that’s our favorite. Made from almonds coated in sugar and pink coloring, it’s the perfect embodiment of local tradition. The origins of the praline are lost in history, and many regions claim paternity. Whatever the case, it was in the XVIIIᵉ century that the Lyonnaise praline, as we know it today, was born.

After two successful editions, the Mondial de la Praline is back in force with redesigned competitions, exciting new features and renowned partners such as the Institut Vatel for the culinary section, and Zest’y Compagnie for mixology.
Culinary competitions:
The classics: Open to professionals and apprentices alike, participants are invited to compete in two emblematic categories:
- Brioche à la Praline
- Praline tart
The original sweet creationcategory based around the Praline is back this year, but will be reserved for professionals.
New for 2025: several surprises await you for this 3rd edition
- A special “Sustainable Praline” prize: in partnership with the Fondation pour la Cuisine Durable by Olivier Ginon, this prize will be awarded to an innovative, eco-responsible creation!
- An “Amateurs” category: Pastry enthusiasts will finally have their place with the “Taste of Praline” theme, a gourmet carte blanche to express all the creativity of anonymous pastry chefs (now’s your chance!).
- The “Praline Cocktail Challenge”: Because praline can also be sipped, a brand-new mixology competition has been launched! The “Praline Cocktail Challenge“! The idea? Invite bartenders and bar enthusiasts to create a unique cocktail on the theme of pink and praline. The key is to sublimate the praline with color, flavor and a story to tell. Thefinalists will compete in a live improvisation round to convince a panel of bar experts.

- September 28: Amateur final at the “Marché Autrement fait sa Praline” event
- September 29: Professional & mixology finals at the Vatel Academy in Marcy l’Étoile
