Let’s continue our tour of Lyon’s unusual restaurants. After Brasserie Georges, voted the best bouchon in 2025, and the restaurant where Paul Bocuse was a regular, we head to another address. In addition to being an authentic Lyon bouchon, the restaurant is one of the last places to offer mâchon as it was eaten almost 200 years ago…
L’Auberge des Canuts, Maître Restaurateur and “Bouchon Lyonnais”

Looking for authenticity in Lyon without having to order via a QR code or eat the same burger you’d find in New York or Tokyo? Come and enjoy an unforgettable and unique experience when you step through the doors of L’Auberge des Canuts on Place Saint-Jean (Lyon 5th arrondissement), opposite the magnificent cathedral and its astronomical clock. Inside, you’ll find a warm and authentic atmosphere that avoids clichés.
But it’s above all on the plate that the magic happens. Here, everything is homemade and the team offers a range of typical dishes that are not to be missed. The menu is simple but it is a sign of controlled and successful cuisine. From Canuts brains to Lyon sausage and the unbeatable praline tart… the entire menu comes from local producers and is cooked in accordance with tradition. As such, L’Auberge des Canuts has been awarded the distinction of “Maître Restaurateur, “ the only title awarded by the French government for French cuisine. In Lyon, “only” 23 establishments can claim this distinction.
Fancy a bite to eat soon?
If you want to take it a step further, don’t hesitate to book a table! We wake up at the crack of dawn to enjoy a leisurely breakfast and, above all, share a delicious homemade terrine and andouillette sausage with macaroni gratin with friends, not to mention a glass of wine. This unique Lyon tradition dates back to the 19th century and still exists today thanks to establishments like this one. Believe us, there’s a before and after the mâchon!
