What if Mother’s Day wasn’t the perfect occasion to don your apron? Renowned chocolatier Pierre Chauver shares his fresh, colorful recipe for raspberry and vanilla iced entremets.
🌿 Ingredients (for an entremets of 6 individual portions)
👉 Soft vanilla cookie
- 60 g sugar
- 1 egg
- 40 g full-fat liquid cream
- 30 g melted butter
- 40 g flour
- 1/2 teaspoon baking powder
- 1 vanilla pod or 1 tsp vanilla extract
👉 Bourbon vanilla ice cream (heart)
- 200 g whole milk
- 100 g full-fat liquid cream
- 60 g sugar
- 2 egg yolks
- 1 Bourbon vanilla pod (or extract)
👉 Raspberry ice-cream mousse
- 300 g raspberry purée
- 90 g sugar
- 250 g full-fat liquid cream (well chilled)
- 4 g gelatin (2 sheets )
👉 Magnum-style icing
- 200 g white or dark chocolate (and food coloring according to desired contrast)
- 50 g grapeseed or sunflower oil
- 30 g roasted almond flakes (optional, but classic Magnum)
🧊 Preparation (spread over 2 days)
1. Prepare vanilla ice cream (the day before)
- Heat the milk and cream with the split and scraped vanilla pod.
- Blanch the egg yolks with the sugar. Drizzle over the hot milk.
- Pour back into the pan and cook at 82°C like a custard.
- Cool, turbinate if you have an ice-cream maker, otherwise pour into an insert mold (heart) and freeze for at least 6h.
2. Prepare the soft vanilla cookie
- Preheat oven to 170°C.
- Whisk together the egg and sugar, then add the cream, vanilla and melted butter.
- Stir in flour and baking powder.
- Roll out in a 16-18 cm circle and bake for 15 min. Cool, then cut to shape.
3. Prepare raspberry ice-cream mousse
- Rehydrate the gelatine.
- Heat 1/3 of the purée with the sugar, add the drained gelatine. Add the remaining purée.
- Cool to 25°C, then fold in the soft whipping cream.
4. Assembly (in a silicone ring or mold)
- Pour 2/3 raspberry mousse into mold.
- Place frozen vanilla ice cream insert.
- Cover with remaining raspberry mousse.
- Place the soft vanilla cookie on top, pressing lightly.
- Smooth and freeze for at least 6 hours (ideally overnight).
5. Prepare Magnum icing (day or night before)
- Melt the chocolate with the oil in a bain-marie or microwave.
- Add almond flakes if desired.
- Let cool to around 35°C.
6. Icing & finishing
- Turn out very cold.
- Place on a wire rack. Quickly coat with Magnum glaze.
- Return to the freezer for a few minutes before serving.
💡Serving suggestions => Remove from freezer 10 to 15 minutes before serving.
